There are an endless number of creative breakfast ideas floating around the Internet, but Youtube's Life Hacks channel offers something fresh with this unusual recipe. A gentleman by the name of Rob attempts to make "breakfast muffins" using only bacon, eggs, and cheese – an interesting departure from the preconceived notion that this treat requires starch of some sort. However, after tasting the concoction that he whipped up in his kitchen, he deems the breakfast experiment a delicious success.
Later in his breakfast hack video, which was uploaded on May 11, 2014, Rob provides some extra guidance on this experimental recipe based off what he learned in attempting it for the first time. He recommends that folks need not grease the muffin tin after all, seeing as how the bacon provides more than enough grease on its own. He also admits to wishing he'd cooked the bacon on one side before placing it in the muffin tin, perhaps for some extra crisp.
While the beauty of this "muffin" lies in its lack of carbohydrates, this recipe can be customized even further to accommodate folks with other dietary restrictions. For example, vegetarians can always use a bacon substitute, such as
MorningStar Farms® Veggie Bacon Strips, for the base of "muffin." And for those who don't eat dairy, the cheese can easily be swapped out for a vegan alternative, such as
Daya, if not nixed altogether. Even the eggs themselves can be substituted (
The Kitchn reports that silken tofu is actually a great baking stand-in).
Regardless, not only do most people feel guilty about the high-carb content in muffins, but they also associate an "eggs and bacon" breakfast with a time-consuming, sit-down meal. Yet thanks to Rob's ingenuity in the kitchen, this savory meal becomes immediately portable, perfect for those individuals who prefer to grab their food and go.
